Red Curry Prawns
Ingredients:
Prawns
Bell peppers
Fresh basil
Red curry paste
Coconut milk
Garlic
Onion
Lime
Lemongrass
Instructions:
Sauté onions and garlic: Heat some oil in a large frying pan. Add chopped onions and minced garlic, and cook until softened.
Add curry paste & veggies: Stir in the red curry paste, cook it for a bit, bell peppers, and lemongrass. Season with a pinch of salt and pepper. Simmer for about 4-5 minutes until the peppers soften a bit.
Add coconut milk: Pour in the coconut milk and let it cook for a couple of minutes to combine the flavors.
Cook prawns & basil: Add the prawns and fresh basil to the pan. Cook for 4-5 minutes, or until the prawns are pink and cooked through.
Garnish & Serve: Squeeze in some lime juice, then garnish with spring onions and cilantro. Serve hot!
